Kölsch (pronounced K'ul sh) is a German pale ale brewed in and around the city of Cologne (Köln). This top-fermented beer uses an ale yeast, noble hops, and light pilsner malt. The beer is fermented at warm temperatures to impart a fruity aspect, then spends a few weeks at colder temperatures, a method used in lagers.

NOTES:
To toast the coconut, spread on a cookie sheet and bake at 300°F (150°C) for 15 minutes or until lightly brown. Allow to cool completely. Then you put the lime in the coconut (i.e., combine the zest and toasted coconut) in a mesh bag or “hop sock” and steep in the fermenter 7 days after fermentation has started. Taste the beer after 3 days and again every day until it tastes how you like it. Remove the coconut/lime and package, carbonate, and enjoy.
